A few months ago I got this idea that I could make my daughters birthday cake for her birthday this year. I figured it couldn't be too hard. Well, last night I found out that it is WAY harder then it looks. First of all, I bought the special Little Mermaid Icing Kit so that the colors would be correct. Well that went by the way side when I started mixing up all of the colors and completely forgot to use the Icing Kit. The first color I mixed up was supposed to be a dark blue but it came out teal. I didn't worry about it too much though. Then I mixed up her skin color, oh my goodness it was way darker then it was supposed to be. I was not about to just waste the frosting and start over again. So I decided to just go with it. It doesn't look too bad, she just looks like she has some very dark skin. I quickly mixed up the frosting for the rest of her swimsuit, it was supposed to be lavender but it turned out bright purple, not a big difference so I left that. I then mixed up the frosting for her lips but it turned out hot orange I mean the brightest orange you have ever seen. I got really scared but then I laughed and thought to myself, "Alright Little Mermaid is just going to have to have a polka dotted swimsuit. It doesn't look too bad, actually the whole cake didn't turn out as bad as I thought it would. It definitely doesn't look like the picture on the cake pan but it works. After I was all done I showed my daughter, she got the biggest smile on her face and told me it looked perfect. I'm glad she loves it, that's what I was hoping for. I realized that it will still turn out even if it's not how it's "supposed to be." Now I can return the Icing Kit and get back $4.99!

(Quick Money Saving Tip: Don't go out and buy the fancy cake boards they have at the store. Just find a sturdy piece of cardboard and cover it with aluminum foil. No one will every know the difference.)

Wow, Lindsay! You did an awesome job! That looks like it would take FOREVER! I showed my daughter the picture, and now she wants one just like it! Haha. Did you make your own frosting, or did you buy a can from the store? I tried doing a rainbow cake for her last year, but that frosting from the store is so soft, it was kind of hard to decorate with.

Thanks Jennifer! I actually made my own frosting, I have found that works the best as you can add more powdered sugar if it's too runny. It was so much fun making, I can't wait to make another one.
